1. Oatmeal This is a personal favorite. A serving of plain oatmeal costs as little as $0.16 and is only about 100 calories. Add a few table spoons of fruit and a half a cup of milk and you've got a complete meal for about a buck. You can always change up the grains to keep it interesting.
2. Breakfast Bagel or English Muffin Make your own Egg McMuffin but with more fiber and less fat. Use a whole wheat bagel or english muffin as the base and add an egg and a slice of reduced fat cheddar cheese. Add a salad and you've got a quick and delicious lunch or dinner.
3. Breakfast Burrito According to the Morning Show, these can be made ahead and even frozen. The breakfast burrito includes 1 tortilla, 2 eggs and 2 tablespoons of cheese and salsa. Get more fiber and less fat by choosing wheat tortillas and low fat cheese.
4. Yogurt Parfait The parfait includes 3/4 of a cup of yogurt, 1/2 cup of low fat cereal and 1/2 cup of fruit. If you haven't tried Greek Style yogurt, try it. If you sweaten it with just a little honey it's really yummy!
The trick to get all of these meals under $1 is to buy the ingredients in larger quantities. You could also look for coupons and specials at your local stores.
